On Monday, November 15, 2021, at a ceremony in Monterey, California, Disciples Escoffier International-USA inducted CASBO Member Dominic Machi into their illustrious society and conferred upon him their signature red scarf identifying him as a professional chef.
Dominic is the director of food and nutrition services for CASBO Organizational Subscriber Mt. Diablo Unified School District and serves as chair of the CASBO Child Nutrition Professional Council.
Disciples Escoffier International is the premier gastronomic society established in France to maintain the good name and traditions of French cuisine. With more than 30 chapters around the world, its goals are to honor the memory of Auguste Escoffier, widely considered to be the father of modern French cuisine, by conserving his legacy and promoting culinary education to foster the next generation of chefs in a true “Esprit Escoffier.”
“[It’s] such an honor to represent the Mt. Diablo Unified School District,” said Dominic in a recent LinkedIn post. “I am now a Disciple who can represent my colleagues around the country. School Food Services Programs are changing, and [I] need to thank Chef Auguste Escoffier for changing how … the culinary art should be respected over 130 years ago.”
Dominic has devoted his professional life to nutritional excellence, having completed his undergraduate work at California State University, Chico, where he received a bachelor’s degree in dietetics and food administration. He’s served with Mt. Diablo Unified since September 2017. Prior to that, he was the director of student nutrition services at Davis Joint Unified School District, also a CASBO organizational subscriber.
CASBO congratulates Dominic on being the first school district director of a child nutrition program in the U.S. to be inducted into this esteemed group of gastronomic professionals.
